The Bacchanal of Fat is the biggest day of the Zafra carnival. From the early hours of the morning, residents and many visitors take to the city's arcaded squares to sample the delicious Iberian pork products that Extremadura offers to the world, appropriately washed down with the local wines. Under their arcades, both squares host chorizos, salchichón (salami), loins (pork loins), and the embers for roasting ribs, chops, and meats. And, gulp by gulp, bite by bite, the people develop a camaraderie with locals and foreigners worthy of praise. As evening approaches, a minute before, a minute after, the Bacchanal jubilantly watches the procession of "San Guarín" through the squares, for the days preceding Lent are mockingly solemn. And after the procession, the half-extinguished embers and the almost-consumed meats announce the end of the day.
